| | When a recognized leader in the vinegar sector decides to enter into the esoterie world of aged balsamic vinegar, they do so with caution and respect for the history and traditions of the trade. If balsamic vinegar represents the essence which made Modena a capital city, the Acetifici Italiani (traditional producers) have understood that after 400 years, now is the right time for them to assert themselves in this market as watchful guardians of the traditions and heritage. For these reasons, the Acetifici Italiani Modena did not intend to make any changes to Modena's balsamic vinegar, already victimized and corrupted by those who do not follow tradition, but to rediscover and protect it. This should give everyone the chance to come to know what is recognized worlwide as the only rea! Balsamic Vinegar of Modena.  It was a philosophy of life that had inspired the building of the beautiful villa in Carpi (now a national historie monument) of the noble Grimelli family in the 18 century. The harmony of the structure, its architectural elements and frescos have made Villa Grimelli the centerpiece of our work, and has inspired our passions and dedication in our search for perfection in the production of our vinegars.
il terzo n fact, our buildings in Carpi, including an impressive industrial plant that was once employed in the production of another element of the world gastronomic culture: parmigiano reggiano (parmesan cheese) has been restored. The plant, which keeps the typical look of our region, and maintains the rural culture, has been  transformed internally to be ready to face the third millennium. High technology and production processes in compliance with the most recent European and international rules (HACCP-ISO-CE), assure the production of a kind of Balsamic vinegar which comes from the fertile land of Emilia in concert with the handed down family traditions of many generations.
 This villa and other buildings, which now belong to A.I.MO. srl, will serve as the company's office, library and public relations centre with an attached museum of the local rural culture. In this building, and in its history, we can pursue our motivation to maintain the traditions, and if the vinegar we produce in the neighboring factory has got something special, you will understand why.
